Bolognese mac ‘n’ cheese
Because Sinyo wanted pizza and macaroni from Domino's Pizza near our house, he asked me to make macaroni and cheese tomorrow. So, I went shopping for mixed cheese: parmesan, cheddar, and mozzarella. And here's my version of macaroni and cheese, mixed with leftover bolognese sauce from when I made spaghetti bolognese the other day.
Bolognese Mac and Cheese:

Bolognese Sauce:
400 gram daging cincang
1 buah bawang bombay, iris halus
3 siung bawabng putih, iris halus
1 kaleng saus Bolognese
secukupnya saus tomat
1 buah tomat segar, potong kecil-kecil - no
2 sdm tomato paste
1 sdm oregano bubuk
2 buah cabe, iris halus
1 sdt bubuk cabe - no
secukupnya garam, merica
keju parmesan untuk taburan - no
Tumis bombay kemudian masukkan bawang putih dan tumis sampai wangi. Masukkan daging cincang. Aduk rata masak sampai berubah warna.
Tambahkan saus Bolognese, tomat, dan saus tomat. Aduk hingga tercampur. Tambahkan garam dan merica. Tambahkan air sedikit. Masak hingga matang. Angkat. Sajikan dengan spaghetti atau pasta lainnya.
Sementara itu masak pasta. Terserah mau spaghetti atau spiral atau panne. Rebus dgn minyak sedikit dan garam sampai al dente. Angkat dan beri saus dan taburan keju parmesan. Mantap deh
Mac n Cheese:
400g macaroni
50g salted butter
2 tbsp flour
2 cups (500ml) milk
2 cups (250g) grated cheese
Cook the macaroni in a large pan of boiling water according to packet instructions (different brands may vary in size & cooking times) until al dente.
Meanwhile, melt the butter in a medium saucepan and add the flour. Cook, stirring, for 1 minute over medium-low heat.
Gradually add the milk, stirring until smooth. Stir gently until the mixture comes just to the boil, then reduce heat and simmer for 2 minutes. Remove from the heat, add the grated cheese and stir until melted and smooth.
Drain pasta and return to the pan. Pour cheese sauce over the pasta and stir until well coated. Season with salt and white pepper to taste.
